UNO’s Modern Filipino Taste: A Filipino Feast for All Senses

This amazing event was spearheaded by power chef couple Chef Roland and Chef Jackie Laudico.

Chef Lau and Chef Jackie have captured the imagination and taste buds of gourmets and foodies alike through the concept restaurants they have established in their 17 years in the catering and restaurant business. Their imaginative approach to cooking and their artistic presentations found culmination in their celebrated restaurant called Guevarra’s in San Juan, Metro Manila.

Their advocacy to promote native Filipino flavors has given them local and international respect, and runs parallel to the philosophy that animates and inspires the F&B outlets at The Waterfront Group of Hotels. The Menu

Guests and food aficionados will, no doubt, find delight in the many tasty treats included in the festival, such as Sisig Baskets (assorted sisig in rice baskets topped with garlic aioli), Palabok Bites (the goodness of palabok topped with Carcar Chicharon) and Sinigang Bites (tamarind-spiced kangkong chips topped with bangus mousse) to whet the appetite.

There are also cold appetizers such as Kinilaw Spoons (fresh fish in spicy calamansi and capsicum emulsion), Danggit Macaroon stuffed with Laing Mousse and Shrimps, and Sushi-Noy (Filipino maki topped with matambaka flakes). Hearty soups include Nilarang Bouillabaisse (a tasty version of the classic Cebuano fish soup) and Pochero Corn Chowder (beef soup with Corn puree).

And for heftier appetites, a list of filling and delicious entrees await, among them the Kaldereta Pie (spicy lamb stew topped with potato mash and cheese), Balbacua Uno (slow cooked ox-tail, beef knuckles and skin UNO style), San Miguel Battered Fish with Buro Cream (Filipino-style beer battered fish served with creamy fermented rice sauce), among others.

1st Disciples D’ Escoffier Dinner: Transfer of Knowledge and Resonating Auguste Escoffier’s Tradition

April 7, 2017 — Waterfront Cebu City Hotel and Casino hosted the first ever Disciples D’ Escoffier Dinner and Oath Taking Ceremony. As a backgrounder, Disciples Escoffier is an organization where it honors the memory of Auguste Escoffier, Master of the French and International Cuisines. The purpose is to promote the big traditions of cooking and the techniques created by Auguste Escoffier, in particular in schools, secondary, superior or Chef professional training, as well as in apprenticeship.

The Dinner and Conferment of Membership

The dinner was graced by the Founding President of Disciples de Escoffier International Asia – Philippines Delegation, Chef Philip John Golding, Secretary General Ms. Donna Sheryl Chua, Corporate Chef Giovanni Sias, Executive Chef Linda Hou, General Manager Mr. Anders Hallden.

Indeed, after the dinner, the awarding ceremony for the apprentices who joined the special event was in place. Chef Philip John Golding gave some interesting remarks and made the event more inspiring.

 

The dinner was held at La Gondola, where authentic Italian cuisine reigns and is enjoyed by our in house and walk in guests.

 

 

About Chef Philip Golding

Chef Philip John Golding, founding President of the Disciples D’ Escoffier International Asia has worked in the Philippines for over twenty (20) years, positively influencing the lives and the businesses of not just expatriates but many Filipinos in terms of transfer of knowledge by business consultancy, teaching, training and development, and job placements. In November 2013, he received “BOSSING” Special Awards as a “Foreignoy” for creating massive job opportunities to Filipinos abroad. This kind of special award is only given to the pillars of certain industries that have pioneered rapid growth boosting local talent.Prior to moving to his second home, British-born Chef Philip had trained and worked in prestigious 3-star Michelin and 5-star hotels and restaurants in around Europe and Asia. His perseverance continued to shine through the Philippine culinary scene as one of the pioneer chefs to open the local minds in embracing international cuisine and culinary education and training system.
